Non-Refrigerated Italian Cold Cuts by Viani

On the shelf, no refrigeration needed.

Viani non-refrigerated Italian cold cuts are designed for distribution and self-service without a refrigerated display. Packed in protective atmosphere, they are stored and sold without the refrigerated cold chain required by fresh or chilled deli products, within the storage conditions specified for each product.

This makes the range suitable for channels where refrigerated products are difficult to manage: tourist retail, wine shops, specialty stores, motorway service stations, airports and export markets without refrigerated logistics.

What we mean by non-refrigerated formats

“Non-refrigerated” refers to the product’s final preservation and packaging format rather than simply to a different recipe. Viani uses protective-atmosphere (PA) packaging for this range, designed to protect the product throughout its specified shelf life without requiring refrigerated display.

Each product has its own storage conditions and shelf life. All Viani non-refrigerated products are gluten-free and contain no added preservatives.

Salamini appesi - Fuori Frigo Viani

The Viani non-refrigerated range

Finocchiona PGI

Finocchiona igp Viani

Finocchiona PGI is characterised by the use of fennel, including seeds and flowers, which gives the salami its distinctive aromatic profile and soft texture.
he PGI designation identifies a product made according to the requirements of the protected geographical indication, with production subject to the applicable specification and controls.

Format: 250 g, ø 55 mm

Salame Toscano

salame toscano con pepe in grani

The defining feature of this Salame Toscano is the cubed lardo incorporated into the grind, which gives the slice a visibly uneven texture. Garlic and whole peppercorns complete the seasoning.

Format: 230 g

Truffle Salami

Salame con Tartufo

A fine-ground salami with small, visible pieces of truffle distributed through the slice. The combination of a traditional salami base and truffle gives the product a distinct aromatic profile within the Viani range.

Format: 230 g

Chianti DOCG Salami

Salame con vino Chianti

Chianti DOCG wine is part of the recipe, bringing a wine-derived aromatic note to the salami. It is therefore not simply a pairing between cured meat and wine: the wine is incorporated into the product itself.

Format: 250 g

Wild Boar Salami

Salame con Cinghiale rete

A blend of wild boar and pork, seasoned with garlic and pepper. The medium-fine grind gives the slice a defined texture while keeping the flavour of the game meat integrated with the pork base.

Format: 230 g

Siena-Style Sausage

Salsiccia Viani tipo Siena

A fine-ground sausage seasoned with garlic and pepper. Its relatively short aging period distinguishes it from the longer-aged cured meats in the range.

Format: 250 g

Spicy Aged Sausage

Salsiccia Piccante

This spicy aged variety stands out for its colour and its characteristic heat, from the chili added to the mix.

Format: 250 g

Wild Boar Sausage

Salsiccia con Cinghiale Viani

Wild boar and pork are combined with pepper and garlic in a fine grind. Compared with the Wild Boar Salami, the finer texture and shorter aging give this version a softer slice and a different expression of the same game-meat pairing.

Formats: 170 g e 200 g

Rigatino Aged Pancetta

Pancetta Stagionata rigatino

This Tuscan aged pancetta comes from a top-quality cut, kept taut throughout production. Garlic and pepper are added to the salt during curing, then the pancetta rests before aging. The name “Rigatino”, typically Tuscan, comes from the streaked look of the slice.

Format: 300 g

Aged Guanciale

Guanciale Stagionato

Aged guanciale comes from the muscle running from the neck to the cheek of the pig. The fat on this cut is especially prized. The flavour is rich, with an intense fragrance and a firmer texture than pancetta. It is the classic ingredient for amatriciana, gricia and carbonara.

Format: 250 g

Non-refrigerated formats for self-service and B2B

For retailers, distributors and foodservice operators, the main advantage of non-refrigerated cured meats is logistical flexibility. The products can be displayed and sold without refrigerated shelf space, according to their specified storage conditions.

This can simplify distribution and shelf management in traditional retail, wine shops, specialty stores, motorway service stations, airports, tourist retail and export channels where refrigerated logistics are unavailable or impractical. The current range has a 78-day shelf life and includes formats designed for self-service and retail. Viani also holds IFS Food and BRC Global Standard for Food Safety certifications, supporting the requirements of organised retail and international distribution.

For the United States, the non-refrigerated range falls under Viani’s USDA/APHIS approval, covering aged products since 2016 and lightly aged products such as Finocchiona PGI since 2024.

Where to find Viani non-refrigerated cold cuts
