Finocchiona
PGI
You smell it before you open the pack. Wild fennel does not announce itself quietly: it fills the room, takes up space, and stays.
Finocchiona PGI: a salami with character
We never tried to make it firmer just to suit a slicing machine. We left it as it is.
From 250 grams to twenty kilos. Same recipe.
The Viani Finocchiona PGI range
Viani Finocchiona PGI comes in a range built for every use, from the shelf-stable snack format to the giant 20 kg wheel that commands the deli counter on its own. The recipe does not change. Only the scale does.
Viani Finocchiona PGI reaches retail and foodservice channels across export markets.

What PGI means for Finocchiona
The Protected Geographical Indication is not a decorative logo. It means every Finocchiona carrying the PGI mark is produced exclusively in Tuscany, checked by a third-party body authorised by the Ministry, and made to a defined specification: traditional recipe, set ingredients, certified process.
The Finocchiona PGI Consortium requires every cut and every pack to carry the full wording, Finocchiona Indicazione Geografica Protetta, in clear print, in Italy and abroad. It protects producers who do it right and buyers who choose knowingly.
Viani is among the producers who pushed for this PGI recognition. By 2015, when the designation was granted, we already had decades of production behind us. We were not chasing a label; we were putting in writing what we had already been doing.
Viani and Finocchiona: from 1922 to PGI
Before the label, there was already a method.
Alvaro Viani started making finocchiona salami in Certaldo when the PGI did not exist, when no specification or consortium existed either. What existed was the recipe, passed down by word of mouth, from those who knew to those who were learning.
A hundred years of Finocchiona. Same air, same seeds, same family.
Find it. Serve it.
Look for it sliced, in a 100 g tray or in the PDO+PGI Tris alongside Prosciutto Toscano PDO and Salame Toscano: three Tuscan designations, one board.
You’ll find it sliced in that 100g tray that disappears before the wine is even uncorked, or in the DOP+IGP Trio together with Prosciutto Toscano DOP and Salame Toscano: three Tuscan designations, one board.
